Here’s what we did for mothers day! Jaime’s mama doesn’t live in these parts, so I shared my mama with her. On the menu: a grilled fennel apple tempeh mix with a creamy walnut dressing and a side of tofu “ricotta”, and a coriander brown-rice-wakame-noodle dish with peanut-tahini sauce, julienned vegetables, tempeh and cilantro (a healthy take on Thai) – we were trying to come up with a good name for this dish. My suggestion was “PEANUT MY NOODLE.” Eh? Eh? It sounds adorable and just plain wrong at the same time. Doesn’t that make it… perfect? Hah.
Apparently I really wanted tempeh that weekend. Lots of tempeh. Whereas tofu is an unusual thing for us to eat, tempeh is the soy dish that we love and recommend. It is fermented, and that makes all the difference! We talk about it a often at our educational dinner parties. Want to know more?
