Want a quick, refreshing summer meal/snack? Make your blender your friend. We drink a lot of smoothies. Depending on how sweet/bitter and thick/thin you make it, you could perhaps call your smoothie “soup”.
Really! Why not blend up some of your favourite raw vegetables with some seasonings you like (fresh herbs and spices, garlic, lemon juice, onion, etcetera)? Thin your concoction with water, almond milk, coconut milk or whatever else you like, and eat it cold like a gazpacho, or warm it slightly on the stove. If you select fibrous vegetables, consider steaming them before you blend. A food processor or a blender would work just fine.
Pictured here in my blender are a couple of organic tomatoes, 1/2 a cucumber, a couple lemons, coconut cream (the cream is from the top of an unshaken can of coconut milk – we don’t advocate cans but this is the one food we don’t have a good alternative for, so… buy organic!), lots of fresh cilantro, coconut oil, and an avocado. The spice we used was curry powder. This combination was inspired by Ani Phyo, the awesome raw cookbook author. We love Ani Phyo!
The end result? Raw, creamy curried coconut gazpacho! BEAUTIFUL! Thanks, Ani!
