‘Tis the season folks – so much beautiful fruits and vegetables everywhere you look!
Fresh, in season produce is definitely our favourite. There’s no better flavour or nutritional value then this.
But we often throw out some of the best parts – the green tops of several different root vegetables!
Most of these tops are comparatively nutritious as things like kale, chard, and spinach… yet we’re not used to eating them, or don’t know that they are edible, so they end up being wasted!
Here’s a little green stir fry that we threw together from today’s farmer’s market goodies, featuring the tops of beets, carrots, and kohlrabi! YUM!
Talk about a delicious dinner.. and no waste!
