Miso is a fermented soy paste that has an amazing salty/tangy flavour and is loaded with probiotics to help your gut flourish! Get the alkalizing benefits of miso in this heartier version of the plain-Jane soup.
1 tbsp olive oil or coconut oil
2 – 3 cloves garlic
1 inch piece of ginger, grated or thinly sliced
3 stalks green onion, chopped
3 cups spinach, chopped
½ cup chopped daikon radish
2/3 cup soaked wakame
1 ½ cups cooked black beans
3 tbsp miso
6 cups water
- Saute the garlic, onions in oil for 1 minute (also hot pepper flakes if using)
- Add water and bring to a boil. Simmer for 10 to 15 minutes
- Add the chopped spinach, wakame, beans, and radish
- Simmer another 5 minutes
- Remove from heat and add miso. Stir to dissolve.
Variation: add ½ tsp toasted sesame oil with the miso, once removed for heat, to change the flavour. If you like a bit of spice, add ½ tsp hot pepper flakes with the garlic at the beginning.
